The Prairie Gourmet features Chef Jocelin Mathys and outdoors-man Trevor Boake as they create delicious dishes from game and ingredients found in wild Manitoba.
Episodes
Episode 1
Jocelin and Trevor travel to a pristine lake in western Manitoba in search of brook trout. Jocelin then prepares the trout for both of them by using a nordic curing method called gravid lax.
Episode 2
Jocelin and Trevor walk the boreal forest in search of it’s most flavorful inhabitant, the ruffed grouse. Jocelin then prepares a muli-layer dish using every part of the bird other than the feathers.
Episode 3
Trevor and Jocelin tackle a local lake during the dead of winter in search of the often maligned jackfish. Jocelin then puts a mediteranian twist on preparing the richly flavoured pike, by creating a cured fish salad.
Episode 4
Trevor and Jocelin head into the wilderness in an effort to trap a wild rabbit. Jocelin then prepares a simple, yet amazingly flavorful dish using the rabbit as the primary ingredient.
